I won't follow your approach to re-use old notes data directories by adjusting the directory parameter in notes.ini and rcp.data in rcplauncher.properties.
Although it is an additional - single/unique - step, you should move the data directories to U:\Notes85\Lotus\Notes\Data.

The reason why ..\Lotus\Notes\Data is always appended by default when using a Multiuser installation with MULTIUSERCOMMONDIR/MULTIUSERBASEDIR is that no extensive code review/testing was done when these install parameters were introduced and therefore there *might* still exist code that is referencing ...\lotus\notes\data for multi-user installations.

If your shared data directory is created in C:\ProgramData\Lotus\Notes\Data\shared, although MULTIUSERCOMMONDIR was used, there might have been some remains of older installations, esp. HKLM\WOW6432Node\Software\Lotus\Notes and HKCU\Software\Lotus\Notes\Installer.

You should not use MULTIUSERBASEDIR=U:\Notes85\, but MULTIUSERBASEDIR=U:\Notes85

When you install Notes using MULTIUSERBASEDIR=U:\Notes85, the actual Notes data directory is U:\Notes85\Lotus\Notes\Data.
You should adjust the directory parameter in your notes.ini stub appropriately.
Directory=U:\Notes85\Lotus\Notes\Data

SPELL_DIR=U:\Notes85 doesn't make sense to me.
A standard client is not using *.dic files and a Multi-user basic client is using C:\ProgramData\Lotus\Notes\Data, where all *.dic files should located, except user.dic which is located in the user's data directory.
A Standard Notes client is not using user.dic, but workspace\udm\userdictionary.xml.

The correct Java notation for U:\Notes85 would be U\:/Notes85.
There is no need to modify rcplauncher.properties, if MULTIUSERBASEDIR=U:\Notes85 is used.
rcp.data would be U\:/Notes85/lotus/notes/data/workspace, then.

Disabling the Sametime System tray icon
The correct syntax of the plugin_customization.ini parameter is
com.ibm.collaboration.realtime.application/useSystemTray=false
not
com.ibm.collaboration.realtime.application/useSystemTray=false\r

If you add this parameter to the install kit's plugin_customization.ini (located in the deploy dir), you don't have to add the parameter to the plugin_customization.ini file after Notes Setup (on every server).

By modifying NotesIniPath you are not preventing the creation of ...\Lotus\Notes\Data, but you are referencing where Notes is looking for a notes.ini file.
In fact, using Directory=U:\Notes85 in the notes.ini is preventing the creation of ...\Lotus\Notes\Data (as long as the basic client is used).
